Pumpkin Pie Smoothie
I have become a smoothie MANIAC as of late. It kind of started around the beginning of year; honestly, not because I was trying to be healthier, but more of out necessity. I needed something quick in the morning that would keep me full until lunch time because I was running around doing errands or volunteering at kiddo’s school until at least 1:30 pm. Smoothies fit the bill, and it also forced me to use up fruits and veggie that otherwise might have gone bad. Win-win.
I always try to mix up the flavors to keep things interesting, and I’ve come up with quite a few good recipes that I’ll probably post as time goes on. But this “pumpkin pie” smoothie I just invented is one of the best I’ve ever made, so I just had to share it even though it’s not even Fall. If you love pumpkin pie or PSL, you’ll love this smoothie any time of the year!
Ingredients:
1 cup cooked butternut squash (you can also use canned squash or pumpkin)
½ cup vanilla yogurt
½ cup milk (more if too thick)
1 tsp vanilla extract
½ tsp cinnamon
¼ tsp each of ginger, nutmeg, and allspice (or 3/4 tsp of pumpkin pie seasoning)
Optional: flavored syrup, such as Monin salted caramel
Instructions
Throw all the ingredients in a blender and start pureeing on low, gradually increasing the speed until desired consistency. You make need to stop once or twice to scrap the ingredients off the side and down into the blades.
